Watermelon, Cucumber, and Feta Cheese Salad

This watermelon, cucumber, and feta cheese salad is like a burst of summer in your mouth! It's beautiful, refreshing, crunchy, and healthy!

Ingredients

  • 6 cups Watermelon cut in bite size chunks ( 1-2 mini watermelon or half of a large watermelon)

  • 1 English Cucumber cut in bite size chunks

  • 1 small diced red onion

  • 1/3 cup mint leaves, chopped

  • 1 cup of butter lettuce, chopped ( or your preference)

  • 6 oz Feta Cheese ( dairy free may be substituted)

  • 1/2 lemon juiced

  • 2 tablespoons olive oil or avocado oil

  • salt and pepper to taste

  • 1 small shallot* peeled and diced

Directions

  • In a medium to large serving bowl add bite-sized cut watermelon
  • slice and dice red onion and add to serving bowl
  • Add chopped lettuce and diced mint to serving bowl
  • Add feta cheese and loosely toss
  • In a small bowl add oil, lemon juice, salt, and pepper. Blend ingredients with whisk or spoon
  • Add diced shallot to serving bowl bowl and mix or use as a garnish on top of salad.

Notes

  • Optional: omit salt to taste as there is salt already in the feta.
  • Optional: omit the oil and just use lemon with a pinch of salt and pepper.
  • Add dressing just before serving or serve on the side.
  • Store chilled in refrigerator for 1-2 days depending on addition of dressing.
