Only four ingredients are needed for this healthy, rich, and fudgy delightful brownie recipe! These brownies are flourless, paleo, gluten-free, egg-free, vegan, and contain zero refined sugar. Phew!

The main ingredient in these brownies is sweet potatoes. Sweet potatoes contain more potassium than bananas. They are a wonderful source of complex carbohydrates, fiber, vitamin A, Vitamin C, Manganese, Vitamin B 6 and so much more.

Plus, using pure maple syrup keeps these brownies refined and sugar-free!

You can use raw cacao powder or dutch process cocoa powder. Either work!


Equipment needed for this recipe:

food processor or high-speed blender

Ingredients

  • 1 cup cooked mashed sweet potato

  • 1/4 cup 100 percent pure maple syrup

  • 1/4 cup cocoa powder

  • 1/2 cup nut butter

  • optional: 1/2 cup of chocolate chips of your choice

Directions

  • Preheat oven to 180C/350F. Line a loaf pan or 8 by 8 square baking pan with parchment paper and set aside.
  • In a food processor or high-speed blender mix all ingredients until smooth. You may add chocolate chips, nuts, etc to the batter at this time.
  • Transfer the batter to the lined pan. You may sprinkle chocolate chips on top of the batter in the pan if you choose. Bake brownies for 18-20 minutes or until brownies are cooked through. Brownies will set as they cool.
  • Remove the brownies from the oven and allow them to cool before cutting them.

Notes

  • To store: Place cooled brownies in a sealed container and refrigerate. They will keep up to one week.
  • Freeze: Freeze brownies individually by wrapping them in parchment paper and a ziplock bag. They will stay fresh for up to 6 months
