These avocado chocolate cookies offer a harmonious blend of creamy richness from the ripe avocados, perfectly balancing the intense cocoa notes to create a decadent, velvety chocolate experience that's simply irresistible. With a subtle hint of earthiness and a fudgy, melt-in-your-mouth texture, each bite unveils a delightful symphony of flavors that dance on your taste buds.
Gluten-free, vegan, egg-free

Ingredients

  • 1/3 cup ripe mashed avocado (no dark spots)

  • 1/2 cup unsalted peanut butter

  • 1/3 cup mashed banana

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup pure maple syrup

  • 1 tablespoon vanilla extract

  • 1/4 teaspoon sea salt

  • 1/2 cup dark chocolate chips

Directions

  • Preheat oven to 350 degrees or 180C. Line a cookie sheet with lightly oiled parchment paper. Set aside.
  • Be sure to measure the avocado and banana to achieve a rich flavor.
  • In a food processor, using an S blade attachment, add the mashed banana and avocado, maple syrup, peanut butter, vanilla extract, unsweetened cocoa powder, and salt.*
  • Process the ingredients on high speed until the batter becomes sticky. Make sure there are no lumps in the mixture.
  • Remove the blade from the food processor and stir the chocolate chips into the batter.
  • Scoop out approximately 1 1/2 to 2 tablespoons of the batter on to the prepared cookie sheet for each cookie. Use a wet spoon to gently flatten the cookie.
  • Add additional chocolate chips to the top of each cookie.
  • Bake for 15-17 minutes or until the cookie is dry on top and sides.
  • Be sure to cool the cookies for 10 minutes before enjoying them.

Notes

  • Store in the fridge for up to 3 days or freeze for later.
  • Placing the cookies in the fridge for an hour helps them set and achieve their rich, velvet texture.
  • Feel free to add nuts of your choosing.
  • You may add some additional sugar to the mixture if you prefer a sweeter flavor. Add the amount of your choosing. I suggest 1/4 cup or less. I suggest coconut or date sugar.
  • You may add about a 1/2 cup of almond flour for a less fudgy cookie.
