Healthier Chocolate Chip Oatmeal Cookies

Ingredients

  • 1/2 cup coconut sugar

  • 3/4 tsp baking soda

  • 3 T milled flax seed

  • 1.5 cups gluten-free oats

  • 2 oz. your choice chocolate chips ( ie dairy free etc.)

    wet ingredients:

  • 2 tsp coconut oil

  • 2 T butter, softened

  • 1/3 cup peanut butter ( or your preferred nut butter but taste will differ

  • 1/2 tsp vanilla

  • 1 egg

Directions

  • Preheat oven to 350 degrees. Cover baking sheet with parchment paper and set aside.
  • Measure and place all dry ingredients in a medium size bowl.
  • Cream together the remaining ingredients with a stand or hand mixer. Do not over blend.
  • Add dry ingredients to the wet.
  • Using a tablespoon or ice cream scoop, place cookies on parchment-lined cookie sheet(s).
  • Bake fro 9 to 10 minutes. Do not over bake.
  • Let cookies rest on the cookie sheet for about 5 minutes before removing them on a cooling rack.
