These vegan, flourless, easy-peasy chickpea blondies are so good you may want to skip the baking and just eat the dough with a spoon! You won't believe they are made with chickpeas!

Ingredients

  • 1 can( 15 ounces) chickpeas, rinsed and drained

  • 1/2 cup all natural peanut butter *

  • 1/3 cup pure maple syrup

  • 2 teaspoons vanilla

  • 1/2 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/3 cup your choice chocolate chips ( vegan, dairy-free etc) plus 1 tablespoon

Directions

  • Preheat oven to 350 degrees F and prep an 8x8 inch baking pan with cooking spray. Set aside.
  • In a food processor, add all ingredients except the chocolate chips. Blend until smooth.
  • Fold in the chocolate chips. Reserve the extra tablespoon.
  • Spread the batter evenly in the prepared baking pan and sprinkle the top of the batter with the reserved chocolate chips.
  • Bake for 20 -25 minutes or until a knife comes out clean. The batter may appear undone. Do not overcook, or blondies will dry out.
  • Cool in the pan for 20 minutes on a wire rack.

Notes

  • You may choose a different nut butter. Just be sure it's all-natural.
  • Adding an egg will make the batter more cake-like. It will then not be vegan.
  • Store in the fridge, covered, for 3-5 days.
