Broccoli Pistachio Salad with Apples, Pears and Cranberries

This is a simple, healthy, and tasty recipe full of fruits and veggies

Ingredients

  • 5 cups broccoli floret chopped into bite size pieces

  • 1 pear cored and diced

  • 1 apple cored and diced

  • 1/4 cup diced red onion

  • 1 cup pistachio nuts ( or your choice of nut)

  • 1 cup dried cranberries

  • For salad dressing:
  • 1 /2 cup sour cream or greek yogurt ( choose dairy-free if preferred)

  • 1/2 cup mayo ( dairy free if preferred)

  • 2 Tbs lemon juice

  • 1/2 cup honey softened

  • 1/4 tsp salt

Directions

  • In a large bowl, combine together chopped broccoli, diced pear, diced apple, diced onion, dried cranberries, and pistachio nuts.
  • salad dressing
  • In a small bowl, combine mayonnaise, sour cream, lemon juice, honey. Whisk ingredients well. Add salt as needed.
  • 1 /2 cup sour cream or greek yogurt ( choose dairy-free if preferred)
  • 2 Tbs lemon juice
  • Add dressing to salad and serve.

Notes

  • cut broccoli into small bite-size pieces
  • chop and core apple and pear
  • Swap pistachio nuts for walnuts or cashews. These nuts would be great roasted.
