Blueberry Vinaigrette and Arugula Salad

Ingredients

  • 1/4 cup fresh blueberries

  • 2 Tbsp white balsamic vinegar

  • 2 tsp lemon zest

  • 1 tsp honey

  • 1/2 tsp kosher salt and black pepper

  • 1/3 cup olive oil

  • Salad Ingredients
  • 8 cups baby arugula

  • 1/4 cup crumbled goat cheese or your preference

  • 2 Tbsp toasted walnuts halves or sliced almonds

Directions

  • In a blender, puree blueberries, white balsamic vinegar, lemon zest, honey, salt and pepper until smooth.
  • While blending, gradually add in the olive oil.
  • Toss 1/4 cup vinaigrette with baby arugula, goat cheese, and nuts.
