Ingredients

  • 2 medium sweet potatoes, washed, peeled and cut into bite size chunks. May use precut frozen approximately 2 16 oz bags*

  • 1 small head of cauliflower, cut into bite size chunks or frozen*

  • 1 red onion, diced

  • 3 tablespoons ( or more) olive oil

  • 2 teaspoons chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • kosher salt

  • 1 teaspoon dried oregano

  • black pepper to taste

  • 1 can ( 15 ounce) black beans*

  • 1 1/2 cups to 2 cups grated or shredded cheese of choice*

  • Topping Options:
  • 1 avocado, diced

  • pickled jalepenos

  • Cilantro, chopped

  • salsa

  • greek or dairy-free yogurt

  • lime wedges

  • hot sauce

Directions

  • Preheat oven to 425 degrees F or 220 degrees C
  • Transfer potatoes, onion, and cauliflower to a rimmed baking sheet.
  • Drizzle vegetables with olive oil ( avocado oil is an option)
  • Blend spices in a separate bowl and mix them into vegetables.
  • Bake at 425 degrees until vegetables are tender, and then add beans. Cook for another 2 to 3 minutes.
  • Add cheese and remove from baking when the cheese is melted

Notes

  • if using frozen sweet potatoes and/or frozen cauliflower, please adjust the cooking time.
  • You may add shredded chicken or meat of your choosing. It should be precooked.
  • You may add an additional can of black beans if making a veggie bowl.
  • Use cheese of your choosing: dairy-free, pepper jack, nacho or queso fresco shreds, feta or cotija cheese.
  • Use a cast iron baking dish.
  • You may grill or bake this dish.
  • Mix in Butternut squash fresh or frozen.
  • Serve as a side or main entree.
  • When making bowl you may use a base of brown rice or riced cauliflower may even put over butter lettuce.
