These flavorful Asian lettuce wraps are an ideal quick and simple lunch or dinner option that are sure to be a crowd-pleaser. You can even try them as an appetizer.

Ingredients

  • 3 Tablespoons oil

  • 1 onion, small diced

  • 4 green onions, thinly sliced, whites and greens separated

  • 4 cloves garlic, minced

  • 1 tablespoon grated ginger

  • 1 can whole water chestnuts, drained and diced

  • 1/4 cup hoisin sauce

  • 2 tablespoons soy sauce or alternative

  • 1 tablespoon rice vinegar

  • 1 teaspoon Sriracha, or more to taste

  • 2 pounds poached chicken, pulled

  • Salt and ground black pepper, to taste

  • 1-2 heads Boston lettuce

Directions

  • Heat oil in a saucepan over medium-high heat. Add onions and saute until onions( both onion and separated white from green onions- preserve separated diced onion greens for garnish) are translucent. Stir in garlic, ginger, water chestnuts, and saute for 1-2 minutes.
  • Add hoisin sauce, soy sauce, rice vinegar, and Sriracha. Cook for about 1-2 minutes.
  • Stir in pulled chicken and heat through, about 2-3 minutes.
  • Season with salt and pepper to taste.
  • To serve spoon several tablespoons of the chicken mixture into the center of a lettuce leaf- taco style.
  • Garnish with onion greens.
