6 cups Watermelon cut in bite size chunks ( 1-2 mini watermelon or half of a large watermelon)
1 English Cucumber cut in bite size chunks
1 small diced red onion
1/3 cup mint leaves, chopped
1 cup of butter lettuce, chopped ( or your preference)
6 oz Feta Cheese ( dairy free may be substituted)
1/2 lemon juiced
2 tablespoons olive oil or avocado oil
salt and pepper to taste
1 small shallot* peeled and diced
